In 2002, when Juanjo was 18 and Casandra 15, we made the first production of Ahillas wine in our house garage with only 100 bottles. Now, with the same respect for the grape, we continue to produce in the winery. The first vintage that came out of our winery was the 2012 vintage at the beginning of 2014.
We started in a garage 18 years ago with 100 bottles, and today we produce 22,000 of our 5 wines.
The barrel room is located 2.5 m below ground level, which protects it from sudden temperature changes. Thanks to the underground well in this room and the natural air outlets, we control the humidity of the room throughout the year in a natural and ecological way. The temperatures vary between 12ºC in winter to 19ºC in summer, an ideal environment in which our wines rest during their aging.
